Hot water dissolves kitchen grease and deposits it in plumbing lines. As the water cools, the grease congeals with debris in the water. This material adheres to the interior surfaces of the pipes. Failure to clean out this grease/food build-up causes slow drainage, foul odors, and eventual stoppage. By keeping grease and other materials from going down the drain, grease traps help keep the sewer line free of buildup and flowing freely. Once a grease trap becomes full, it allows grease to enter the sewer system, creating build up that will eventually result in a clog in your sewer system. Scheduling regular service: The Town of Jackson and Teton County recommend that grease traps and interceptors be cleaned on a regular basis. Small interior grease traps should be cleaned at least weekly, unless management can prove that less frequent service is sufficient. Large underground interceptors should be cleaned at least semi-annually (two times per year). When accumulation of solids and scum reach 25% of the tank capacity, the tank should be pumped. Some small or undersized interior grease traps may require daily cleaning by restaurant employees to comply with regulations.
